How can I select multiple gerber file outputs from Kicad project manager
and load them into different layers of GerbView?

If I double click on them individually they seem to load in a new
instance of GerbView.

Hi,

Open Gerbview and load the gerber files either one at a time or all
together instead of double click on the file.

Ok.  I didn't realise I could select multiple files with GerbView. 
That's not so bad :)

It would be nice to be able to do it from the KiCad project manager too ;-)

In fact the usual way to do it is from the kicad project manager.

Keep in mind that the project manager main function is launching
eeschema, pcbnew, gerbview, the symbol and footprint editors and the
other applications.
