Is there a nice way to use PcbNew to collect & panelise several ".kicad_pcb" designs?

I'm happy to move the boards around by hand, but I can forsee difficulties defining the cut-outs.

Here is a rough plan:
Copy "board_1.kicad_pcb" file to "merge.kicad_pcb"" Move the board "out of the way" Use a text editor to append the next board GOTO 2 Finally, move the various designs into place manually and then (somehow) make adjustments to "Edge.Cuts" --> a single panel.

(I've not yet tried GerbMerge, which operates on Gerber files).

You should not really need to use the text editor method.

Move the boards out of the way as you suggest, then you should be able to
use the append board option. (file menu) The board will appear in the
centre of the page. Move out of the way and repeat. Once you have all
your boards imported you can then move them into position.
